
Ingredients:
• 4 Veal Shanks
• 1/4 lbs Pancetta
• 2 Yellow Onions
• 2 Celery Stalks
• 2 Carrots
• 8 Cloves of Garlic
• 10 Stems of Thyme
• 1 28oz Can of Whole Peeled Plum Tomatoes
• 1 Cup Chicken Stock
• 1 Cup White Wine
• Flour
• Butter
Gremolata
• 1 Whole Lemon Zest
• 6 Cloves Garlic, Minced
• ¾ Cup of Chopped Parsley

Once vegetables are cooked, remove from dutch oven and set aside
Add vegetables and pancetta back in to reincorporate.
Heat oven to 325 degrees, place in oven covered and set a timer for 2 hours.
