Ossobuco

With lots of videos for instructions!!

Ingredients:

• 4 Veal Shanks
• 1/4 lbs Pancetta
• 2 Yellow Onions
• 2 Celery Stalks
• 2 Carrots
• 8 Cloves of Garlic
• 10 Stems of Thyme
• 1 28oz Can of Whole Peeled Plum Tomatoes
• 1 Cup Chicken Stock
• 1 Cup White Wine
• Flour
• Butter

Gremolata

• 1 Whole Lemon Zest
• 6 Cloves Garlic, Minced
• ¾ Cup of Chopped Parsley

Ingredients!!!
Start by rendering down the pancetta till golden brown. Remove from dutch oven and set aside.
Add in your chopped vegetables, salt and pepper and sweat down.

Once vegetables are cooked, remove from dutch oven and set aside

Lightly dredge veal shanks in flour.
Add butter to the dutch oven and add in your floured veal shanks.
Sear veal shanks and Deglaze with white wine the dutch oven as follows
Add in chicken stock, prepped tomatoes and thyme as follows

Add vegetables and pancetta back in to reincorporate.

Add veal shanks back into dutch oven and bring back to a light boil.

Heat oven to 325 degrees, place in oven covered and set a timer for 2 hours.

One hour in Bob likes to flip the veal shanks over.
After cooking for two hours, check seasoning.
Return to oven and cook for another 45 minutes UNCOVERED
Remove veal shanks and thyme and stir in the gremolata. Return veal shanks into dutch oven and finish cooking for 15 minutes.
