Ingredients:
1. 1 Tablespoon Extra Virgin Olive Oil
2. 3 Teaspoons Butter
3. 2 Medium Yellow Onions
4. 3 Celery Stalks
5. 1/2 Cup Dry White Wine
6. 4 Cups Clam Juice
7. 3 Yukon Gold Potatoes
8. 2 Bay Leaves. 9. 1 Tablespoon Fresh or Dried Tyme
10. Salt, Pepper and any other Seasonings you might like. 11. 2 Cups Heavy Cream 12. 2 Pounds Cod or Other White Fish. 13. 3 Cans Chopped Clams. 14. 1/2 Pound Smoked Whitefish or bacon. 15. 2 Tablespoons Fresh Parsley. 16. 2 Cans Sweet Corn. π·
First start by sautΓ©ing onions and celery in oilve oil and butter, about 5 minutes then add wine. Turn heat up and cook uncovered until wine has reduce to half.
Next add cubed potatoes, clam juice, all your spices and simmer. The potatoes should be covered in the liquid, if not add water to the pot. Once simmering lower heat to medium and cook covered about 10-15 minutes.
Add the cod, fish and smoked whitefish. Cook covered on low heat until fish is cooked through. Heat heavy cream on low in a separate pot. Do not boil! Once fish is cooked add in clams, corn and parsley. Serve with toasted bread.
